Magic Brownies
Instructions:
- 1 15 oz can black beans (1 1/2 cups) rinsed well with cool water
- 1/2 cup oats (regular or gluten free)
- 1/2 cup coconut oil
- 1/2 cup mini chocolate chips (regular or dairy-free)
- 1/2 cup maple syrup
- 2 Tbsp cocoa powder
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- pinch of salt
Instructions:
- Preheat oven to 350.
- Blitz all ingredients together in a food processor, adding a Tbsp or two of water while blending.
- Spread into a greased 8-inch square or round pan. You can also line the bottom with parchment paper if you like.
- Bake at 350 for 15 minutes or until top is glossy and starting to pull away from the edges.
